How do you get a table at Plénitude in Paris?

How do you get a table at Plénitude in Paris? I'd send a request for two or three possible dinners on its SevenRooms page as soon as your Paris dates are fixed, and email the restaurant the same day. On November 1, 2026, the online calendar offered a request, not a confirmed table, for every dinner from November 2026 to early September 2027. The first tables it would confirm on the spot were on Tuesday, September 14, 2027.

Plénitude is Arnaud Donckele's restaurant on the first floor of Cheval Blanc Paris, the hotel on the Seine at 8 Quai du Louvre, by the Pont Neuf. Cheval Blanc's page lists three Michelin stars and dinner only, Tuesday to Saturday, from 7:30pm. The menu is built around Donckele's sauces, which the restaurant treats as the main course rather than the garnish.

So the realistic plan is a request, not a booking. A request tells the restaurant which nights you want, and tables come back when other guests cancel.

The calendar is the one fact here that moves. A request date can turn into a confirmed table any day a guest cancels, so the dates above are what the calendar showed on November 1, not a promise about yours.

How do you make the request count?

Give the restaurant choices. Ask for two or three dinners across different weekdays rather than one Saturday, and say in the request what the dinner is for if it is an occasion. A Tuesday or Wednesday is the night I'd try first, because it is where a cancellation is least likely to be taken by someone already on the list.

Then follow up by email to plenitude.paris@chevalblanc.com with the same dates and your phone number. The hotel's page gives both the email and the phone line for reservations, and a short email with dates is easier to act on than a call.

If you are staying at Cheval Blanc Paris, put the dinner request in when you book the room too. The Cheval Blanc room guide picks the room.

When is Plénitude closed?

Plan around four closures. On November 1, 2026, the SevenRooms calendar marked Plénitude closed on Christmas night and December 26, for two weeks from January 5 to 19, 2027, for a few days in March and early May 2027, and for the whole of August 2027. It is also closed every Sunday and Monday.

That makes August the one month to rule out entirely. If the dinner is the reason for a summer trip, aim for July or September; September 2027 is where the calendar was already confirming tables.

What should you do if Plénitude is full?

Keep the request open and book a backup you would be just as happy with. Two of the hardest Paris tables work on fixed rules you can plan around: Septime opens each date exactly three weeks ahead at 10am Paris time, and L'Arpège serves lunch on weekdays at 120 euros less than its dinner.

Cheval Blanc Paris has three other restaurants in the building, listed on the same page as Plénitude, so a night at the hotel can still include a dinner there while the request is pending.

Where does Plénitude fit in a Paris trip?

Give it a night with nothing after it. Dinner starts at 7:30pm and a tasting menu here is the whole evening. Cheval Blanc sits between the Louvre and the Pont Neuf, so an afternoon at the Louvre and a walk along the river is the natural lead in; where to eat near the Louvre covers lunch on that day.

For the rest of the stay, where to stay in Paris picks the neighborhood, and the Ritz or the Crillon compares two other palace hotels if Cheval Blanc is full.
