When do DiverXO reservations open? Every day at midnight Madrid time, for the date 90 days ahead. I'd be on DiverXO's booking page at that minute on the day your date opens, which is 3pm the afternoon before in California and 6pm in New York for most of the year. The booking page says it plainly, checked November 1, 2026: a new date is released in the calendar every day at 00:00, 90 days in advance.
DiverXO is Dabiz Muñoz's restaurant in the NH Eurobuilding hotel in the north of Madrid, one tasting menu, no à la carte. It serves lunch and dinner Tuesday to Friday only, so of every seven dates released, four are ones you can book.
A booking is a ticket: 450 euros a person, paid up front and taken off the bill on the night. Drinks are extra.

When does your date open?
Count back 90 days from the meal. On November 1, 2026, the newest date in the calendar is Saturday, January 30, 2027, a day DiverXO is closed. Some dates worth knowing:
- Friday, February 12, 2027, the Friday before Valentine's Day: opens at midnight on Saturday, November 14, 2026, which is 3pm Friday, November 13, in California.
- Friday, March 19, 2027: opens Saturday, December 19, 2026.
- Friday, May 14, 2027, the eve of Madrid's San Isidro holiday: opens Saturday, February 13, 2027.
- Friday, June 11, 2027: opens Saturday, March 13, 2027.
One clock catch: from March 14 to 27, 2027, the US is on summer time and Spain is not yet, so midnight in Madrid is 4pm in California and 7pm in New York. These dates assume the 90 days count from the meal date, as the booking page describes. Check the calendar a day early to confirm which date is about to open, and have the payment card ready, because the 450 euro ticket is paid at booking.
What should you do if DiverXO is full?
Join the waiting list for the exact date. The booking page recommends it for any date that is gone and says it works surprisingly often. The refund rule explains why: anyone who cancels at least two weeks out gets their money back, so tables return to the list in that window.

Where does DiverXO fit in a Madrid trip?
Give it a weekday with a light morning. The menu is long and the restaurant paces it to the table, so plan nothing after a lunch and nothing before a dinner. DiverXO is in the north of the city, a taxi ride or Metro line 10 from the center, so it doesn't pair with a museum the way a central restaurant does.
