That is the rule on Den's own reservation page, checked October 29, 2026. The line is staffed from 12:00 to 17:00, Monday to Saturday, and the booking counts only once Den sends you a confirmation email.\nThere is no online calendar. Den says it does not take online bookings, does not work with booking platforms or agencies, and does not accept reservations from third parties. A seat offered by a reseller is not a Den reservation. The call is yours to make.\nDen is Zaiyu Hasegawa's restaurant in Jingumae, a modern kaiseki: the Japanese seasonal multi-course dinner, served as one set menu. Dinner starts between 18:00 and 20:00, and the phone is the only way to book it."

      "heading": "What time is that in the United States?",
      "text": "Noon in Tokyo is the evening before on the American clock: 7pm Pacific and 10pm Eastern from November to early March, and 8pm Pacific and 11pm Eastern in summer. Japan does not change its clocks, so the gap moves when the United States does. Daylight time in the United States ends on November 1, 2026, so for anything you book this winter, use 7pm Pacific or 10pm Eastern.\nAn example. For dinner on Wednesday, February 10, 2027, the line opens for that date at 12:00 on Thursday, December 10, 2026, Japan time. In Los Angeles that is 7pm on Wednesday, December 9; in New York, 10pm the same evening.\nThe line is closed on Sundays, and Den's page does not say what happens to a date whose release day is a Sunday. If yours is, call at noon on the Monday and ask."

      "text": "Have three dates, the party size, every allergy at the table and an email address you check, before you dial. Den takes parties of up to four, so a table for five or six is not possible here.\n• Dates. One first choice and two others. The first minutes after noon are when the line is busiest, and a second date saves a second call.\n• Allergies. Den asks for every allergy and intolerance at booking. It will try to work around them but says it cannot promise.\n• Email. The confirmation email is the reservation. If it does not arrive, call back inside the 12:00 to 17:00 window and ask.\nKeep calling if the line is engaged. It is the only door in."

      "text": "Den is closed on Sundays and on a long list of dates through the New Year: check them before you plan a trip around this dinner. Den's site lists these closures, checked October 29, 2026:\n• November 2026: 6 to 9, 15 to 18, 23, 26 and 30.\n• December 2026: 4 to 8, 17 to 19, 23 to 25 and 29 to 31.\n• January 2027: 1 to 11.\nFor a trip over Christmas or the New Year, that leaves very few nights. The open nights in mid-December and from January 12 are where I'd aim."

      "id": "cancel",
      "heading": "What is Den's cancellation rule?",
      "text": "Cancel or change at least two days before; a cancellation or a smaller party on the day costs the full set price. For a Monday dinner, Den asks you to call by Saturday, since the line is closed on Sunday. Calls other than a same-day cancellation should come inside the 12:00 to 17:00 hours, because no one answers during service.\nDen's page does not publish the price of dinner, a dress code or a rule on children. Ask on the call, so you are not guessing on the night."

      "text": "Book Den Kushi Flori, the set-menu restaurant Den runs with Florilège's chef in Jingumae, which takes online bookings, then keep calling Den in the two days before your dates.\n• Den Kushi Flori. Run by Den with the chef of Florilège, it books through its TableCheck page, which listed a ¥13,000 dinner course and an ¥8,000 lunch course, service extra, on October 29, 2026. Cancelling within 24 hours costs the full meal. It is closed on Mondays.\n• Florilège. The French tasting menu from the chef who runs Den Kushi Flori with Den opens one day at a time, one month ahead. The Florilège booking guide has the rule.\n• A sushi counter instead. If the night itself matters more than the restaurant, a counter with a clear online calendar is the dependable booking. The Tokyo omakase booking guide lists release dates and cancellation fees for named counters.\n• A late call. Den's free-cancellation line is two days out, so anyone giving up a table has most reason to do it then. A call in the last two days before your date is the best chance of a seat that comes back.\nDen does not take third-party bookings, so a hotel concierge cannot hold a table for you. A concierge can still help with the call itself if you are nervous about it."

      "id": "plan",
      "heading": "Where does Den fit in a Tokyo trip?",
      "text": "Put Den on your second or third night, never the night you land. A same-day cancellation is charged in full, and a late flight is the most common way to lose a table like this. Jingumae is a ten-minute walk from Gaienmae station on the Ginza line, so a day in Aoyama or Harajuku ends close by.\nThe Tokyo food guide plans the rest of the eating around this dinner, and the Japan booking order shows where a two-month release sits next to flights and hotels. For a base close to Jingumae, the where to stay in Tokyo guide picks the area."
